憑藉過往在烘焙實驗上的累積經驗，我們已具備足夠的知識與技術，能夠自在地表現我們所偏好的風味輪廓。然而，作為一個品牌，我們希望在咖啡中呈現的是「和諧」。更具體來說，是風土、品種與處理法之間的平衡與協調。因此，你會經常看到我們的咖啡以偏淺的烘焙程度呈現，藉此更清楚地展現這三個關鍵元素的特性。
以淺焙風味為起點，我們進一步運用自身的烘焙知識與技術，去描繪我們所追求的那份和諧，而這也正是樂趣開始的地方。在烘焙風味設定上，我們主要呈現兩種輪廓：「Vivid」與「Peace」。
「Vivid」是一種充滿活力的風味表現，著重於展現明亮且鮮活的酸質。杯中的酸度能夠提升整體飲用體驗，帶出更多層次的風味變化。相對地，「Peace」則是一種較為柔和、溫潤的風味輪廓，酸質表現內斂而平順，適合偏好沉穩口感的人，在溫度逐漸下降的過程中，風味轉換緩慢而細緻。
此外，我們也提供名為「Bridge」的風味設定，這是一款烘焙程度較深、風味乾淨且清晰的輪廓。「Bridge」旨在成為淺焙愛好者與深焙愛好者之間的橋樑——它同時具備淺焙所喜愛的清楚風味表現，也保留了深焙族群偏好的厚實、奶油般口感。
With our past experience in experimenting in roasting, we are now equipped with the knowledge and skills to freely express the profile we prefer. However, as a brand, we aim to present “harmony” in coffees. To be more specific, it’s the harmony among terroir, varietals, and processing. Therefore, you will often find our coffees light in roast level, as the main approach to better present the characters in the three factors.
And starting from a light profile, we apply our knowledge and skills in roasting to better present the harmony we are looking for, but also where the fun begins. With our roasting, we mainly present two types of profiles ; “Vivid” and “Peace.”
“Vibrancy” as a profile is one that is more lively, showcasing the acidity a lot more. The acidity in the cup will lift up the cup experience for you and will lead to more layers. On the contrary, you can find “Peace” as a profile that is softer, more gentle like in cup profile. The softer acidity is suitable for people who look for a rather calm cup, with slow transition of flavors through out temperature dropping.
In addition, you can also find “Bridge,” a darker roast level to present a clean and clear. This profile aims to be the “bridge” between light roast lovers and dark roast lovers. It has clear flavors that light roast lovers like yet with heavy, buttery tone that dark roast lovers are looking for.
